The food is the tradition too
Lighting the menorah and exchanging gifts are only part of Hanukkah. Cooking for the eight days is every bit as central.
Latkes — potato pancakes — go back to the Middle Ages, though they were originally made with fried cheese. Potatoes displaced the cheese in the 19th century and never gave it back.
Making them
Two schools: mashed or grated. Grated is the more traditional and produces a crunchier latke. Grate potato and onion together, squeeze out as much water as you can, bind with eggs and flour, shape into pancakes, and fry in oil. Serve with applesauce or sour cream, depending on which side of that argument your family is on.
The oil is the point. Frying is what ties the dish to the sacred oil in the Hanukkah story, which is why a plate of latkes is not merely dinner.
