It is now one of the most widely ordered coffee drinks anywhere. Coffee with milk has been drunk in Europe since the 17th century, but the version people mean today came out of Italy — caffè e latte, literally coffee and milk.
Two ingredients, and a surprising amount of technique. It starts with a shot of espresso, and while that is pulling, the milk is steamed. Getting the steam right takes real practice: the goal is a silky foam whose bubbles are so fine they are effectively invisible, laid about half an inch thick.
