The set

Heritage breeds are the older farm animals that industrial agriculture largely set aside, and the series makes the case for keeping them. Alongside the milking Devon photographed here by Aliza Elizarov, the set includes the mulefoot hog, the Wyandotte chicken and the Narragansett turkey among others. The ceremony was held at Mount Vernon, Virginia.

The milking Devon

An American breed descended from cattle imported in 1623. They were first valued as draft animals, and then proved unusually versatile — good milk and good meat from the same medium-sized, even-tempered animal.

Fashion in livestock moved on and the breed fell out of favor for decades. It survives because a smaller number of farmers kept raising them, and interest in exactly those qualities has come back around.
